Australia's history of wine manufacture traces back to its settlement in 1788. Governor Arthur Phillip brought vines with him on the First Fleet, and numerous vineyards were established in the area that is now Sydney. By the 1890s, the popular Hunter Valley, Barossa Valley, and Yarra Valley had begun to produce wine.

Stonefish NERO Old Vines Shiraz

The Shiraz fruit for this wine was carefully selected from the best old vines in the Barossa Valley. It was de-stemmed and fermented in open fermentors with pump overs twice daily before resting in French Oak Hogshead barrels for 2 years before bottling. Concentrated and opulent aromas of blackberry, plum, black cherry and cassis burst from the glass with fervour. These wonderful aromatics carry through to a supple and velvety palate with beautifully balanced acidity which give the wine a vibrant energy. Black fruit characters abound on the palate, backed by spice, dark chocolate, licorice and oak. This wine shows perfect tension between ripe fruit, bright acidity and a smooth seductive tannins that provide wonderful length. Enjoy now or cellar for up to 10 years.
