Gỏi Cuốn

Vietnamese Salad Roll - Gỏi Cuốn, is one of the most basic traditional Vietnamese street food dishes and extremely popular in southern Vietnam (especially Saigon). There is a legend that says Gỏi Cuốn was invented during the time of King Quang Trung. Because the soldiers were constantly on the go, they needed "mobile" meals to maintain their strength. Gỏi Cuốn ingredients are light, easy to carry and could be eaten cold giving the soldiers a nutritious meal especially during battles.

Gỏi Cuốn is more commonly known as rice paper rolls. They consist of boiled shrimp and pork with basil, mint, cucumber and cilantro wrapped in Bánh Tráng (rice paper), usually served with peanut or fish sauce.

Shrimp and pork can complement with many different White wines but consideration should also be given to pairing with sweet/medium Italian Sparkling Wines.
