Bánh Xèo

Vietnamese Crepe, Bánh Xèo is a crispy, stuffed rice pancake popular throughout Vietnam. Bánh means cake, while Xèo means sizzle. The name refers to the loud sound the rice batter makes when it is poured into the hot skillet. Bánh Xèo a savoury fried pancake made of rice flour, water, and turmeric powder. Some common stuffings include: pork, prawns, diced green onion, and bean sprouts. The crispy pancakes are served with lettuce, mint, Thai basil, and fish mint. This light Vietnamese dish is perfect to match with a slightly sweeter white wine.

Spätlese is a German wine made from the riper grapes that usually have been picked at a later stage in the harvest. Spätlese wines are more intense in flavor and concentration and therefore compatible with more flavorful foods like Bánh Xèo, or to drink by themselves.
