Bo Kho

Bo Kho is a delicious Vietnamese pot-roasted beef stew that originates from Saigon during the French colonial period, hence its similarity to the French pot au feu, but it is spiced in a traditional Vietnamese manner, fragrant with lemongrass, star anise, and cinnamon. When the meat is fork tender, carrots are added and served with rice noodles or freshly baked baguette to complete the Bo Kho. Some chefs add turnip, daikon radish and potatoes for variation.

The perfect wines to pair with Bo Kho are either Cabernet Sauvignon or Malbec, these full bodied red blends tend to have dark fruit and very present tannins that are great with beef.
