Mì Quảng

Mì Quảng is a special kind of Vietnamese noodle dish that originated in the Quang Nam province of Central Vietnam, and was born out of the cultural connection between the Vietnamese and Chinese. The basic ingredients of Mì Quảng include noodles made from rice soaked in water for about 4 hours and then ground into the flour, meat (usually pork, beef, chicken or duck), shrimp, eggs, roasted peanuts, chili, lemon, onions and garlic. As with many traditional Vietnamese dishes the most important ingredient is the broth which is made by stewing the bones of chicken for many hours. Mì Quảng is generally eaten with toasted sesame rice crackers, watercress, banana flower, lettuce, coriander and perilla herbs. In addition, some people who prefer a stronger-flavour can serve it with chili garlic fish sauce. Sauvignon Blanc displays aromas of passionfruit and ripe gooseberry, elegant and finely balanced palate with vibrant tropical fruit flavours, with a crisp lingering finish, these complement perfectly the chilli and lemon and garlic in this traditional noodle dish served predominantly in the central region of Vietnam.
