Chardonnay is a green skinned grape, believed to have originated in the Burgundy wine region of eastern France. The Chardonnay grape itself is very neutral, with many of the flavors commonly associated with the grape being derived from such influences as terroir and oak.
Chardonnay is vinified in many different styles, from the elegant, "flinty" wines of Chablis to rich, buttery Meursaults and New World wines with tropical fruit flavors and is typically fermented and/or aged in oak barrels. When Chardonnay is aged in oak barrels, it may pick up vanilla overtones in it’s aroma and flavor.
Chardonnay wine matches well with chicken and with dishes that are served with a lot of butter or a cream sauce. Most Chardonnay’s lack the acid to match well with seafood.
